It’s been more than two weeks since I posted my last entry here. I’m having a jolly good time this week as my school is already on holiday. To those who still have to go to school this week – hey, it’s your last day tomorrow. Cheer up!
I’m here to share with you a simple lunch I’ve prepared today. I’m not a good cook, I admit. But I’d love to try out simple, healthy dishes for my family. Just think about it – what’s the point of dining out every day if what goes into your tummy is high in preservatives, sodium, fat and cholesterol? All these in the long run, will only lead to obesity, high blood pressure, heart attack and loads of other health problems.
I’ve recently purchased tilapia fish fillets – RM10.50 for three pieces. I find it very convenient to cook. I don’t have to clean them thoroughly or soak them in tamarind juice since they are already in the form of fillets. Once taken out from the freezer, you can thaw, clean and cook them right away.
What you see in the photo is my third attempt to cook fish fillets (the second attempt was a fish burger, which was superb – healthier than Fish O’Fillet that you purchased from McD’s. Just sprinkle some salt and pepper, dip it in white egg, coat with breadcrumbs and some flour and fry the fillet.)
Prepare the following ingredients by chopping them finely – yellow onion, ¼ tomato and a chilli. Spread them on the fillet. Grate a small amount of carrot onto it. Sprinkle some salt, mixed herbs (any herbs will do) and pepper. Next, you’re going to need a teaspoon of honey to enhance the flavour and it will be extremely wonderful if you have a lemon in your kitchen – grate the skin to give the fish a powerful aroma, or simply squeeze it. Lemon juice is definitely great for any fish dish.
Once ready, heat the pan, preferably a non-stick pan because you need to grill it – it’s a healthy way of cooking. Add some olive oil in the pan and onto the fillet, and cook it with a moderate heat. As you cook, you don’t need to turn the fillet over. Just cover the pan with a lid to make sure the top part of the fillet cooks well.
